These protein-rich almond flour muffins make for a hearty snack or a low sugar holiday dessert.

Pumpkin muffins recipe

 2 ½ cups Finely Ground Almond Flour
 2 tsp Pumpkin Pie Spice Blend
 ½ tsp Cinnamon
 1 tsp Baking Soda
 ½ tsp Cream of Tartar or 1 tsp Lemon Juice
 ¼ tsp Sea Salt
 1 cup Canned Organic Pumpkin Purée
 ¼ cup Honey
 ¼ cup Date Syrup
 4 Large Organic Free-Range Eggs
 1 tsp Vanilla Extract
 ¼ cup Chopped Mixed Nuts(almonds, pecans, hazelnuts)
 Butter or Coconut Oil
 Drizzle of Mana Hemp Honey

Gather: Gather together all ingredients, a large and a medium mixing bowl, muffin tins, and muffin parchment or oil spray for the tins. Preheat the oven to 350 degrees.


Mix: In the medium mixing bowl, mix the almond flour, baking powder, and dry spices together. In the large bowl mix the eggs, pureed pumpkin, honey, and vanilla extract. Slowly add the flour mixture into the wet ingredients and mix very thoroughly.


Bake: Spray the muffin tins with the oil, or put the parchment paper in and then scoop the batter into the muffin tins until they are ¾ full. Sprinkle nuts on top. Put the rack into the middle and bake for 25 to 30 min.


Cool & Serve: Let the muffins cool for 30 minutes, then take out and slice in half. Slather with butter or coconut oil and Mana Hemp Honey and enjoy!
