Optional Serving Toppings: cucumber slices, basil leaves, toasted pine nuts
Completely cover and soak cashews in water for 12 hours.
After soaking, drain and rinse cashews.
Cut cucumbers in half lengthwise. Using a teaspoon, scrape out all the seeds.
Put all ingredients into a high-speed blender.
Blend until smooth.
Transfer soup into a large bowl and refrigerate for at least 2 hours.
Serve chilled and add desired toppings.
