Gather all ingredients, a blender (preferably a Vitamix), and a nut milk bag or fine cheesecloth.
Put coconut chips and warm water in a blender. Let sit for 20 minutes.
Add all remaining ingredients.
Taste and adjust for sweetness.
Strain with nut milk bag or fine cheesecloth and pour into a 1 qt or larger jar.
Save pulp to eat with fresh fruit and nuts or cookie or banana pancake batter.
Chill in the fridge until ready to serve. Separation is normal, shake it before enjoying. Makes 1 qt of milk.
